Gelatinization by Food Extrusion

Food extrusion is an advanced processing technology that produces a concentrated product with increased digestibility, making it highly suitable for the human digestive system. This process allows for maximum absorption of nutrients and results in a significantly longer shelf life, up to 4 years. Consequently, the traditional method—using finely ground starchy raw food, which offers much lower nutrient absorption and a shorter shelf life (typically up to 12 months)—is being superseded by food extrusion.


The Extrusion Process and Benefits

During the extrusion of starch-containing food, its granules (typically those that pass through a No. 4 and No. 10 mesh) are exposed to high pressure and hot steam for only 30 seconds. This brief, intense process is as effective as a 15-minute boiling of the whole food.

Extruded starchy food can be consumed instantly and conveniently, with no requirement for additional thermal processing. Furthermore, food extrusion is a chemical-free process, utilizing only water, pressure, and heat.
